Healthy Chicken Pasta Salad with Avocado, Tomato, and Basil

 
Ingredients
  • 8 ounces farfalle pasta
  • 1 1/2 cups cherry tomatoes , halved
  • 2 avocados , peeled, seeded, and chopped
  • 2 slices bacon , cooked and crumbled
  • 2/3 cup fresh basil leaves , chopped
  • 2 cloves garlic , minced
  • 2 Tablespoons lemon juice
  • 1 Tablespoon olive oil
  • salt and freshly ground black pepper , to taste

Instructions
  1. Cook pasta according to package directions. Drain and set aside to cool.
  2. In a large bowl toss together the cherry tomatoes, avocado, bacon, basil, and garlic.
  3. Drizzle mixture with lemon juice and olive oil. Season with salt and pepper to taste.
  4. Top with Parmesan cheese.
